An email QR code opens the phone's mail app with the recipient, subject line and body already filled in. The person only has to add their message and hit send, which removes the two things that stop people writing: finding the address and deciding what to put in the subject.

Which mail app does it open?

Whichever the phone has set as default — Apple Mail, Gmail, Outlook or another client. The mailto standard is handled the same way everywhere.

Can I put line breaks in the pre-filled body?

Yes. Line breaks are encoded into the mailto link, so you can prepare a small form ("Name:", "Order number:", "Issue:") for the sender to fill in.
